Being on the my healthy eating plan is encouraging my whole family to eat new things. While I've always loved Eggplant, my family has not. This was SO good! If you feel the need for sidedishes, you could certainly have half of this portion and add additional protein and veggies to complete the meal, but it was really satisfying all by itself.
Eggplant Parmesan
Ingredients:
1 cup eggplant, sliced into circles
1/4 cup Rao's pasta sauce
4 oz mozzarella cheese, 2% shredded
2 tablespoons Parmesan Cheese, reduced fat
1 teaspoon olive oil
Directions:
Put eggplant slices on baking sheet lined with parchment paper
Mix olive oil with 1 tbsp Parmesan cheese
Brush on eggplant rounds - bake for 30 minutes at 350 till brown
Transfer to baking dish - cover eggplant with the sauce and cheese. Sprinkle one tbsp of Parmesan cheese on the top. Put back in the oven for another 15-20 minutes until the cheese melts and bubbles
Makes 1 Serving: 3 veggies | 1 lean protein | 1 healthy fat | 1 condiment
